One Pot Meal and Grapefruit Cocktail

Looking for an easy one pot meal for summer? Mexican quinoa is one of our family favorites and is perfect for large or small gatherings!

Find original recipe at damndelicious and cooklikeachampion. We modified some of the ingredients for our own taste and you can do the same!

Mexican Quinoa

INGREDIENTS:

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 jalapeno, minced (for a less spicy option I substitute a can of mild green chilies)

  • 1 cup quinoa (tri color is fun!)

  • 1 cup vegetable broth

  • 1 (15-ounce) can black beans, drained and rinsed

  • 1 (14.5 oz) can fire-roasted diced tomatoes

  • 1 cup corn kernels, frozen, canned or roasted

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Kosher salt and freshly ground black pepper, to taste

  • 1 avocado, halved, seeded, peeled and diced

  • Juice of 1 lime

  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute.

  2. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro.

  3. Serve immediately.

Note: For non-vegetarian options I serve grilled beef marinated in carne asada seasoning as a side dish. I also offer sour cream, sliced black olives, and tortilla strips as toppers!

Tri color quinoa

Vegetable broth

Whole kernel corn, black beans, green chilies, diced tomatoes, cumin, red pepper

Add all ingredients to a large pot and cook as directed.

Top with cilantro and lime juice. Lime juice is an important ingredient so don’t skip it!

Carne Asada

Serve warm and top with sour cream, cilantro, and tortilla strips.

If you want a bread side (not gluten free), I suggest baked flat bread topped with olive oil, parmesan cheese, and parsley flakes.


Grapefruit Cocktail

This is a refreshing summer drink for all occasions!

Garnish with grapefruit rind swirls.

You can substitute prosecco for gin or skip the alcohol and make it a mocktail!
