Super Easy Whole Nut and Seed Bread

I’ve been looking for a Danish inspired bread recipe for a while…you may know the kind…very dense…could be used as a weight training implement…and be served open face with just about any topping!


I tried several different recipes and after taste testing them all, I choose one adapted from Nordic Kitchen Stores

Not only does this bread look and taste amazing, it is super simple to make, incredibly versatile, gluten free, and packed full of protein and fiber!

Ingredients

  • Cashews or Pistachios: 1/2 cup

  • Almonds: 1/2 cup

  • Sunflower seeds: 1/2 cup

  • Pumpkin seeds: 1/3 cup

  • Sesame seeds: 1/4 cup

  • Linseeds: 1/4 cup

  • Chia seeds: 3 tablespoons

  • Sea salt: 3/4 teaspoon

  • Dates (chopped): Approximately 10 - add more if you want it sweeter

  • Olive oil: 3 tablespoons

  • Eggs: 2

Instructions

1. Preheat oven to 350 degrees.

2. Line a 1 pound loaf pan with parchment paper and spray with Pam.

3. In a bowl, combine the nuts, seeds, and salt.

4. Whisk eggs thoroughly and add olive oil. Whisk again to combine.

5. Chop dates and add them to the egg/oil mixture. (this should keep them from sticking together.)

6. Combine egg mixture and nut mixture together and stir. Pour into the prepared loaf tin.

7. Place the loaf tin on the bottom shelf of the oven and bake for approximately 45-50 minutes.

8. Once baked, allow the loaf to cool in the tin.

9. Run a knife along the sides of the loaf to loosen it. Turn bread out and cut thin slices as needed. Place bread in refrigerator for up to one week.

Cut thin slices and toast. Top with avocado or nut butter and coconut for a satisfying and healthy meal or snack.

The beauty of this Seedy Nut Bread is that it pairs wonderfully with both savory and sweet toppings. Here are some ideas to inspire your taste buds:

Sliced or mashed avocado, cherry tomatoes, and a sprinkle of sea salt; smoked salmon, cream cheese, and capers; or hummus and roasted red peppers.

egg or tuna salad

almond butter, sliced bananas, and a drizzle of honey;

coconut, fresh berries, and a sprinkle of cinnamon; or chocolate-hazelnut spread and sliced strawberries.

And remember, the possibilities are endless with this versatile bread, so don't be afraid to get creative with your toppings and enjoy every last bite.
